Professional Chef Training Program

Cilantro Culinary Academy
designed programs to equip students with practical knowledge focusing on
Competency Based Training (CBT) in culinary arts and strong product
knowledge as well as the ability to perform and organize the food
production according to the established international standards.
Cilantro Culinary designed
3 levels of programs for our chef-to-be participants, namely Certificate,
Diploma and Advanced Diploma Level.

Certificate in Cook
|
|
This certificate level
program aims to introduce students to the culinary arts by providing
basic concepts of culinary and by focusing on Competency Based Training (CBT).
Upon completion of the program, students can either progress to a diploma
program or join the work force.

Certificate Awards
|
|
Upon completion of the course, and by
having competency in all tasks of Certificate level, students will be
awarded Sijil Kemahiran Malaysia (SKM) Level 1 & 2. SKM is to be
issued by Jabatan Pembangunan Kemahiran (JPK), formerly known as Majlis
Latihan Vokasional Kebangsaan (MLVK).

Examination
|
|
To obtain Certificate in Cook, students
will have to go through modular theory and practical exams, where
students will be tested on each duty and tasks as specified in syllabus.
Only upon passing all the tests and exams, students will be considered as
Competence.

Durations
|
|
Cilantro Culinary Academy offers
8-9-months training in our center for Certificate Level Program. After
the 8-9-month in-house training, students will be arranged to go through
6 months Practical Training in local hotels or restaurants. Should our
students choose to continue on Diploma Level, then 6-Month Practical
Training will commence after Diploma Level.

time course – About 3.5 days a week

Diploma in Food Preparation and Cooking
|
|
This Diploma level program aims to provide a wider plain of knowledge to
students in the culinary arts, including the overall operations of
maintaining a kitchen and menu planning. Students competent in this
program will have a wide range of career opportunities in the food and
beverage industry.

Pre-requisite

Students or individuals who have
successfully completed Certificate Level. Students from Certificate level
will immediately continue Diploma Level without Practical Training.

Diploma Awards
|
|
Upon completion of the course, students
with competency in all tasks and duties will be awarded City & Guild
Diploma in Food Preparation and Cooking.
|
|
Examination
|
|
Diploma in Food Preparation and Cooking
will have to go through 2 exams, 1 theory exam and 1 practical exam as
specified by City & Guilds. Student passing both exams will be
awarded C&G Diploma. The exams are prepared by C&G UK, and the
exams will only be conducted twice a year, in June and December of the
year.

Advanced Diploma in Culinary Arts
|
|
Graduates of this Advanced Diploma are highly skilled technicians equipped
with supervisory skills in areas of Fine Dining, Food Production and Food
Service. They have achieved a high degree of professionalism and are
trained to focus on quality of the product as well as customers'
expectations.
They will also able to manage a kitchen operation in hotel or restaurant.

Pre-requisite
|
|
Students or individuals who have successfully
completed Diploma Level. Students from Diploma level will have to go
through 6-months Practical Training before they can commence class on
Advanced Diploma Level.

7-8-months in-house training. Upon
successfully obtained Advanced Diploma in Culinary Arts, students are
encouraged to perform practical training in UK for 6 months. Cilantro
will make necessary arrangement, for students to have a smooth operation
in carrying out their practical training abroad.

|
Other Options
|
|
With Advanced Diploma in Culinary Arts,
students will also have chance to further their study in UK, for Level 4,
or Bsc in Hospitality Management. There are 5 universities in UK
accepting C&G Advanced Diploma in Culinary Arts as their year 1
program.
